Caviar produced from California-grown white sturgeon. Spawned and hatched and then transferred to our pure, mountain spring ponds where high velocity currents purge the fish of any off tastes and ensure maximum freshness. Our Caviar is harvested, cured and packed by hand in small batches to ensure maximum quality, then held at a temperature controlled 29F. We flip and rotate each container weekly to ensure consistent curing. It's almost ready!
